    This Carrot Cake Banana Bread is melt-in-your-mouth-moist and flavorful and you couldn’t even tell there were carrots in it. Whole wheat bread with banana, carrots and nuts is a real energetic bomb and a great excuse to have a “cake” of a breakfast.

    • 2 medium ripe banana-mashed
    • 1 cup shredded carrots (about 2 large carrots)
    • 1 1/2 cup whole wheat flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 2/3 cup sugar
    • 1 egg
    • 1 egg white
    • 1 teaspoon vanilla
    • 1/3 cup vegetable oil
    • 1/3 cup milk
    • 1/2 cup chopped walnuts or pecans (save about 2 Tablespoons for topping)
    • 4 oz cream cheese-softened
    • 1/3 cup powdered sugar
    • 1/4 teaspoon cinnamon
    • 1/2 teaspoon vanilla
