    This brown rice salad is a great way to put leftover brown rice to work for another meal!

    Ingredients

    • 1 1/2 cups cooked brown rice
    • 3/4 cup chopped button mushrooms
    • 1/3 cup finely chopped green onions
    • 3/4 cup cashews (or sunflower seeds, for a nut-free option)
    • 1/2 cup chopped sun dried tomatoes in oil, reserve the oil (a 4-ounce jar will do the trick)
    • 2 tablespoons oil from the sun dried tomatoes
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons nutritional yeast, optional
    • salt and pepper, to taste
